The Ultimate Vegan Spread: Oyster Mushroom and Roast Almond Pate

This is a delicious rich pate with a delicate blend of flavours. It is easy to spread and goes well with crisp crackers or bread. Alternatively serve it with vegetables. Oyster mushroom and roast almond pate is a nutritious, gut friendly easy to prepare meal.


Oyster Mushroom and Roast Almond Pate

It serves 2 and the preparation time wouldn't take more than 15-20 mins and suitable for freezing.


When you’re ready to cook, your table should have:

  • 75g (3oz) flaked almonds 🌰

  • 1 onion, finely chopped 🧅

  • 2 garlic cloves, crushed 🧄

  • 300g (10g oz) oyster mushrooms 🍄

  • Salt and freshly ground black pepper 🧂🌶️


Cooking Notes:

  • Begin by spreading the almonds evenly on a baking sheet and roasting them in a preheated oven at 200°C (400°F), Gas Mark 6, for about 4-5 minutes until they turn a light brown color. Remember to set aside a small portion of the flakes for garnishing later. 🌰🔥

  • Next, melt 25g (1oz) of butter in a saucepan and sauté the finely chopped onion and crushed garlic until they become soft. Add the oyster mushrooms to the pan and increase the heat, cooking until they become tender and lightly browned. Allow the mixture to cool. 🧈🧅🧄🍄

  • Once cooled, transfer the roasted almonds and cooked mushroom mixture to a blender or food processor. Blend until smooth, gradually adding the remaining butter. Season the mixture generously with salt and freshly ground black pepper.🥣👩‍🍳

  • Spoon the blended mixture into a decorative bowl or individual ramekins, and garnish with the reserved almond flakes before serving.🥄🌿
